Last night after a not so stellar dinner, I wanted to treat myself with something yummy. The fridge was bare, hence the not so stellar dinner, so I was at a bit of a loss. Here is what I saw: 2 bananas, pineapple liqueur (that is never used), pecans, coconut & Isadelights. So naturally I made baked bananas. I have no idea the calorie count but I am guessing it was pretty low.
Just multiply the recipe by the number of people being served.
1 banana cut lengthwise and placed in a buttered pyrex dish
Pour 2 tsp of liqueur poured over each half – you may also use fruit juice if you have it on hand.
Add one Isadelight or other chocolate if you choose. I like the Isadelight because it has the same amount of calories and sugar as an 1/8th of an apple and it is all natural. Click the above link for more information on this tasty treat.
Bake at 400 for 10 minutes
Top with 2 tsp of chopped nuts, 1 tsp of coconut – pecans or almonds or whatever you have and bake for another 5 minutes
Optional toppings – chocolate sauce, dried fruits.
You may also add nutmeg or cinnamon to this if you like.
Eat this on its own or top it off with plain no fat organic greek yoghurt and drizzle with agave or whatever you choose. Of course, the more sugar and fat the less healthy it becomes.
